05 - 2 tablespoons olive oil
06 - 2 teaspoons chili powder
07 - 1 teaspoon smoked paprika
08 - 1 teaspoon cumin
09 - 1/2 teaspoon garlic powder
10 - 1/2 teaspoon onion powder
11 - 1/4 teaspoon cayenne pepper
12 - 1 teaspoon salt
13 - 1/2 teaspoon black pepper
14 - 1 red bell pepper, thinly sliced
15 - 1 green bell pepper, thinly sliced
16 - 1 yellow onion, thinly sliced
17 - Juice of 1 lime

→ Topping

18 - 1 cup shredded cheddar cheese
19 - 2 tablespoons chopped fresh cilantro
20 - 1/2 cup sour cream
21 - 1 avocado, sliced

# How To Cook:

01 - Preheat oven to 400°F. Prick the sweet potatoes several times with a fork. Rub with olive oil and salt. Place on a baking sheet and roast for 40 to 50 minutes, until tender when pierced with a fork.
02 - Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken strips and all spices including chili powder, paprika, cumin, garlic powder, onion powder, cayenne, salt, and pepper. Sauté for 2 to 3 minutes.
03 - Add bell peppers and onion to the skillet. Continue to cook, stirring frequently, until chicken is cooked through and vegetables are softened, about 5 to 7 minutes. Squeeze lime juice over the mixture and toss well. Remove from heat.
04 - When sweet potatoes are done, let them cool slightly. Slice each open lengthwise and gently fluff the insides with a fork to create space for the filling.
05 - Stuff each sweet potato generously with the chicken fajita mixture. Sprinkle shredded cheese over the top of each potato.
06 - Place stuffed potatoes back in the oven for 5 minutes, or until cheese is melted and bubbly.
07 - Remove from oven and top with cilantro, sour cream, and avocado slices if desired. Serve immediately.

# Expert Tips:

01 -
  • One complete meal tucked inside a single vegetable means less cleanup and real comfort on busy nights.
  • The cheese melts into every crevice while the lime-kissed chicken stays tender, creating this perfect balance of smoky and bright.
  • It works for meal prep, impresses people at dinner, and tastes even better the next day when all the flavors have gotten to know each other.
02 -
  • Don't skip pricking the sweet potatoes; if you do, they can explode in the oven and it's messy and honestly a little startling.
  • The chicken cooks faster than you'd think, so keep the heat at medium-high and stir often; overcooked chicken gets tough, but medium-high heat with constant motion keeps it tender.
  • Letting the potatoes cool just slightly before slicing them makes them easier to handle and less likely to fall apart when you're stuffing them.
03 -
  • If your chicken breasts are thick, gently pound them or slice them in half horizontally before cutting into strips so everything cooks at the same speed.
  • Don't crowd the pan when cooking the chicken; give it space to brown slightly before you add the vegetables, and it'll taste infinitely better.
