Cowboy Caviar Black Bean Corn (Printable)

# What You Need:

01 - 1 can (15 oz) black beans, drained and rinsed
02 - 1 can (15 oz) black-eyed peas, drained and rinsed

→ Vegetables

03 - 1 cup corn kernels, fresh or thawed from frozen
04 - 1 red bell pepper, diced
05 - 1 green bell pepper, diced
06 - 1 medium red onion, finely chopped
07 - 2 medium Roma tomatoes, seeded and diced
08 - 1 jalapeño, seeded and finely chopped
09 - 1/3 cup fresh cilantro leaves, chopped

→ Dressing

10 - 3 tablespoons olive oil
11 - 2 tablespoons red wine vinegar
12 - Juice of 2 limes
13 - 1 teaspoon honey or agave syrup
14 - 1 teaspoon chili powder
15 - 1/2 teaspoon ground cumin
16 - 1/2 teaspoon salt
17 - 1/4 teaspoon black pepper

# How To Cook:

01 - In a large mixing bowl, add black beans, black-eyed peas, corn, red bell pepper, green bell pepper, red onion, Roma tomatoes, jalapeño, and cilantro. Gently mix to combine.
02 - In a small bowl or jar, whisk together olive oil, red wine vinegar, lime juice, honey or agave, chili powder, cumin, salt, and black pepper until the mixture is emulsified.
03 - Pour the prepared dressing over the bean and vegetable mixture. Toss gently to ensure all ingredients are thoroughly coated.
04 - Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step may be skipped if serving immediately.
05 - Serve chilled or at room temperature with tortilla chips or as a vibrant side dish.
