- Preheat oven to 350°F. Line two baking sheets with parchment paper.
- In a large bowl, cream softened butter and granulated sugar until light and fluffy using electric mixer.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract and lemon zest.
- In separate bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet mixture, alternating with milk, until soft dough forms.
- Roll dough into 1 tablespoon balls. Place on prepared baking sheets 2 inches apart. Bake 15-18 minutes until just set and lightly golden on bottom.
- Cool cookies completely. Using small knife, scoop out cavity from flat side of each cookie. Reserve crumbs.
- Melt chocolate with heavy cream. Stir until smooth. Mix in reserved crumbs and jam to form thick paste.
- Fill cavity of one cookie with chocolate-jam mixture. Press another cookie half gently on top to form peach shape.
- Mix small bowls of water with red and yellow food coloring. Lightly brush each peach, blending colors to mimic real peaches.
- Roll colored cookies in granulated sugar until evenly coated.
- Insert mint leaf into top of each cookie for realistic stem, if desired.
