Pesto Grilled Cheese Sandwich (Printable)

Golden sourdough loaded with melty mozzarella, parmesan, and vibrant basil pesto for a gourmet twist on the classic comfort sandwich.

# What You Need:

→ Bread

01 - 4 slices sourdough bread

→ Cheese

02 - 4 slices mozzarella cheese
03 - 2 tablespoons grated Parmesan cheese

→ Pesto

04 - 3 tablespoons basil pesto

→ Butter

05 - 2 tablespoons unsalted butter, softened

→ Optional Add-ins

06 - 2 slices tomato
07 - Fresh baby spinach leaves

# How To Cook:

01 - Spread 1 tablespoon of softened butter evenly on one side of each bread slice, ensuring complete coverage to promote even browning.
02 - Flip each bread slice and spread approximately 1½ tablespoons of basil pesto on the unbuttered side of two slices, leaving a small border around the edges.
03 - Layer 2 slices of mozzarella cheese on each pesto-covered bread slice, then sprinkle 1 tablespoon of grated Parmesan over the cheese. Add tomato slices or fresh spinach if desired.
04 - Top each sandwich with the remaining bread slices, positioning the buttered side facing outward to create the crispy exterior.
05 - Heat a non-stick skillet over medium heat. Place sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula to ensure good contact with the pan, until golden brown and cheese is thoroughly melted.
06 - Remove sandwiches from skillet and let rest for 1 minute to allow cheese to set slightly. Slice diagonally and serve warm while cheese remains melty.

# Expert Tips:

01 -
  • The combination of nutty pesto and creamy mozzarella creates layers of flavor that make regular grilled cheese taste plain in comparison
  • It takes less than 20 minutes from start to finish, making it perfect for weeknight dinners when you want something special without the effort
02 -
  • Medium low heat is better than high heat, giving the cheese time to melt before the bread burns
  • Pressing gently with your spatula helps the bread make contact with the pan for even browning
03 -
  • Use mayonnaise instead of butter on the outside for an even crispier, more golden crust that wont burn as easily
  • Let your sandwiches rest for the full minute before cutting, or youll lose half the cheese when you slice
