01 - Pour buttermilk into a shallow bowl. In a separate bowl, blend flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Immerse each pickle chip or spear in the buttermilk, then coat thoroughly in the flour mixture, pressing gently to adhere.
02 - Fill a deep skillet with 2 inches of vegetable oil and heat to 350°F. Fry coated pickles in batches for 2 to 3 minutes per side, until deeply golden and crisp. Transfer fried pickles to a paper towel-lined plate to absorb excess oil.
