# What You Need:

→ Seasoned Beef

01 - 1.5 lbs ground beef, 80/20 ratio recommended
02 - 2 tbsp taco seasoning, store-bought or homemade blend
03 - 1/2 cup water

→ Chips & Cheese

04 - 2 large bags tortilla chips, approximately 16 oz each
05 - 3 cups shredded cheddar cheese
06 - 2 cups shredded Monterey Jack cheese
07 - 1 cup nacho cheese sauce, optional for drizzling

→ Fresh Toppings

08 - 1 can black beans, 15 oz, drained and rinsed
09 - 1 cup sour cream
10 - 1 cup guacamole
11 - 1 cup pico de gallo or fresh salsa
12 - 1/2 cup sliced black olives
13 - 1/2 cup sliced pickled jalapeños
14 - 1 cup diced tomatoes
15 - 1/2 cup chopped red onion
16 - 1/2 cup chopped fresh cilantro
17 - 2 limes, cut into wedges

# How To Cook:

01 - Heat a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned. Drain excess fat from the skillet.
02 - Stir in the taco seasoning and water. Reduce heat to low and simmer for 3–5 minutes, stirring occasionally, until the sauce thickens and coats the beef. Remove from heat and keep warm.
03 - Preheat the oven to 400°F to prepare for melting the cheese.
04 - Arrange tortilla chips in a single layer across large baking sheets or oven-safe platters, ensuring even distribution.
05 - Sprinkle shredded cheddar and Monterey Jack cheeses evenly over the chips, covering the surface.
06 - Bake for 5–7 minutes, or until the cheese is fully melted and bubbly. Watch closely to prevent burning.
07 - Carefully move the cheesy chips to a serving table or buffet station.
08 - Arrange bowls of seasoned beef, nacho cheese sauce, black beans, sour cream, guacamole, salsa, olives, jalapeños, tomatoes, red onion, and cilantro around the chips. Place lime wedges on the side.
09 - Let guests build their own nachos by spooning beef and toppings onto the cheesy chips.

# Expert Tips:

01 -
  • Everyone gets exactly what they want without you playing short-order cook for eight different preferences
  • The beef mixture stays warm for hours so you can actually enjoy your own party instead of constantly refueling the main attraction
02 -
  • Put the beef in a slow cooker on the warm setting instead of leaving it on the stove, where it inevitably develops that unappetizing skin on top
  • Line your baking sheets with parchment paper first, because burnt-on cheese is arguably the hardest thing to clean in the entire kitchen
03 -
  • Put out small spoons instead of letting people use their hands to serve toppings, because double-dipping isn't charming even at a casual party
  • Keep a hidden bag of backup chips in the pantry because running out of the vehicle for all that cheese is arguably the worst hosting failure imaginable
