- Heat a large skillet over medium-high heat. Add the ground beef and cook for 5–7 minutes, breaking it apart with a wooden spoon until browned. Drain excess fat from the skillet.
- Stir in the taco seasoning and water. Reduce heat to low and simmer for 3–5 minutes, stirring occasionally, until the sauce thickens and coats the beef. Remove from heat and keep warm.
- Preheat the oven to 400°F to prepare for melting the cheese.
- Arrange tortilla chips in a single layer across large baking sheets or oven-safe platters, ensuring even distribution.
- Sprinkle shredded cheddar and Monterey Jack cheeses evenly over the chips, covering the surface.
- Bake for 5–7 minutes, or until the cheese is fully melted and bubbly. Watch closely to prevent burning.
- Carefully move the cheesy chips to a serving table or buffet station.
- Arrange bowls of seasoned beef, nacho cheese sauce, black beans, sour cream, guacamole, salsa, olives, jalapeños, tomatoes, red onion, and cilantro around the chips. Place lime wedges on the side.
- Let guests build their own nachos by spooning beef and toppings onto the cheesy chips.
