Hearty Winter Chicken Casserole (Printable)

# What You Need:

01 - 1.1 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

14 - 1 teaspoon dried rosemary

16 - 3 oz grated Gruyère or cheddar cheese, or dairy-free alternative

# How To Cook:

01 - Preheat the oven to 375°F.
02 - Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until lightly browned, about 5 minutes. Remove and set aside.
03 - In the same skillet, add onion, leek, and garlic. Sauté for 3 minutes until softened.
04 - Add carrots, parsnips, butternut squash, and mushrooms. Continue cooking for 5 minutes, stirring occasionally.
05 - Return the chicken to the skillet. Stir in chicken stock, cream, Dijon mustard, parsley, thyme, rosemary, salt, and pepper. Allow to simmer for 5 minutes.
06 - Pour the mixture into a large, ovenproof casserole dish.
07 - Sprinkle grated cheese evenly over the surface of the mixture.
08 - Cover with foil and bake for 30 minutes.
09 - Remove foil and continue baking uncovered for 15 to 20 minutes until golden and bubbling.
10 - Allow to rest for 5 minutes before serving.
